Interested in a new flavor of smoothie? Trying to find a healthy breakfast to take on the go? Well this smoothie is it! I know cilantro might not be the first thing you think of when you think of a smoothie but, trust me, it is delicious (assuming you like cilantro!). This smoothie is bright and refreshing. Give it a try and let me know what you think. Of course, you can always substitute parsley for the cilantro if you'd like.
8 oz coconut water
1/2 cup water
Juice of 1/2 lemon
1.5 cups spinach
10 oz frozen pineapple
protein powder, optional
Put in your blender (I use a Vitamix which is amazing) and mix it up. Enjoy!
Like all other smoothie recipes, this one can be made ahead to make things even faster in the morning. You can put all of the ingredients in a ziplock and store in the freezer - and even make several days worth putting each one in another baggie. Or you can make it the night before and store in a glass jar. Just shake it up before you serve it.
